Tortillas with Oatmeal and Cassava Flour

Finding cassava flour tortillas recipes options has always been difficult. However, as people's dietary limitations have increased, so has demand, and we now have an abundance of gluten free and paleo diet options. Exploring new gluten-free options can be exciting if you're like me.

When it comes to preparing gluten free grain free tortillas, there are several GF flour combinations to choose from, but not all will result in beautifully soft and malleable tortillas.

I was able to produce some delightfully tasting, supple tortillas after some trial and error and combination of several gluten free flours and seasonings.

Cassava is a multipurpose root vegetable that has received a lot of attention recently. While its popularity is relatively new, it has been utilised for millennia in its native regions for herbal uses.

I perfected this recipe using two flours: oats and cassava root. Both are combined to produce nut-free and gluten-free tortillas.

While oat flour may be made simply by grinding rolled oats, cassava root flour can be found in most grocery stores.

Oat Flour Advantages

Manganese, phosphorus, magnesium, vitamin B1 and vitamin B5 are all abundant.

Excellent source of carbon fibre. Oats include beta glucans, a type of fibre that lowers cholesterol.

Whole oats contain antioxidants and polyphenols, as well as avenanthramides, which are nearly exclusively present in oats.

Avenanthramides help to reduce blood pressure by producing nitric oxide. Nitric oxide gas dilates blood arteries, resulting in increased blood flow.

Tapioca pearls, which are prepared by processing cassava root, are a wonderful go-to meal for infants who have diarrhoea since they are light on their tummies and contain no dairy, wheat, or cereals.

You'll Need the Following Ingredients to Make These Tortillas:

  • 1 cup oatmeal flour
  • 1 cup cassava starch
  • a pinch of ground black pepper
  • 1 teaspoon sea salt
  • 1 tsp. garlic powder (for the extra delish flavor)
  • 1 quart milk (here I use coconut milk)

 

To make healthy gluten-free oat and cassava flour tortillas, combine all of the dry ingredients.

Make a dough with the coconut milk.

           Slowly add the water while mixing the dough until it comes together smooth and soft.

Divide the dough into 8 equal-sized balls.

Roll a ball into a medium-thick tortilla between two parchment paper sheets or silicone mats.

Meanwhile, preheat a cast iron skillet over medium-high heat.

Pick up the tortilla and place it on the skillet.

Cook until golden brown on all sides, then spread with ghee butter on one side.

Enjoy once it has cooled because it is softer at room temperature.

Excellent Advice!

If the tortilla does not come off the parchment paper, place it in the skillet with the paper. In about a minute or two, you can easily peel it off!

If your tortillas aren't completely spherical, use a lid or a springform pan frame to make them so!

Get a tortilla warmer if you want to keep your tortillas warm; they work wonderfully and make great serving dishes on the table!
